Dutch Boerenkool Stamppot

Boerenkool Stamppot is a traditional Dutch comfort food made with creamy mashed potatoes mixed with kale, served with smoked sausage. It’s a simple, satisfying dish that’s perfect for the colder months. Here is my take.

Ingredients:
2-3 sausages of preferred flavour (Smokies, Bratwurst, etc.)
2 bunches of kale
1/2 diced white onion
2 tbsp unsalted butter
1/4 cup cream
1 tsp Maggi seasoning
5-6 medium potatoes
Instructions:
Freeze your bunches of kale for a minimum of 1 hour. Remove the leaves from the stem and chop them finely.
Peel your potatoes and cut them into quarters. Add them to a large pot with 6-8 cups of water (potatoes should be well covered).
Add your kale as well as your 1/2 diced onion to the pot. Bring your potatoes, kale and onion to a boil and allow to cook for 15-20 minutes until the potatoes are fork tender.
As your potato mixture cooks, pan fry or BBQ your sausages until a temperature of 165 Fahrenheit is reached. Cut your sausages into 2-inch pieces.
Drain the water from your pot, and mash your potato mixture. Then, add 2 tbsp of butter, 1/4 cup of cream, and Maggi seasoning, continuing to mash until everything is well incorporated.
To serve, spoon a good amount of your potato mixture into a dinner-sized bowl, placing your cooked sausage pieces on top.
