Holiday leftover casserole

This casserole is packed with a variety of flavors from your festive meals. It transforms your leftover turkey, stuffing, veggies, and more into a comforting dish that is great for any time of day. Charlie and I came up with this one Christmas 2022. You can enjoy it as a hearty breakfast or a satisfying supper, it's a quick and tasty way to make the most of your leftovers.

Ingredients:

  • 2 cups leftover stuffing

  • 1 cup leftover mashed potatoes

  • 1/2 cup leftover squash

  • 1/3 cup leftover carrots

  • 1 cup leftover turkey meat, shredded

  • 4 tbsp. turkey gravy

  • 1/4 cup butter, melted

  • 5 eggs

  • 2 tsp savory

  • salt and pepper to taste


Instructions:

  • In a medium bowl, stir the stuffing, potatoes, squash, carrots and turkey meat together. Everything should be well incorporated, but it shouldn't become a paste.

  • To the stirred mixture, add 1/4 cup melted butter, 2 tbsp. of your gravy, 1 tsp savory and season with salt and pepper to taste. Stir everything through gently.

  • Spread your remaining 2 tbsp. of gravy over the bottom of a casserole/lasagna dish. Transfer your casserole mixture to the dish, creating an even layer.

  • Whisk 5 eggs and pour them over top of the casserole, giving everything a shimmy to allow the egg to settle in to the mixture. Season the top of the casserole with the remaining tsp of savory, and some salt & pepper.

  • Bake at 400 degrees Fahrenheit for 45-50 minutes until the egg is fully cooked and the casserole has a medium-firm texture. Broil everything for 1 minute for a crispier top.
