Sesame Chicken

This sesame chicken recipe strikes the perfect balance of flavors, with the nutty richness of sunflower oil and sesame, while the tangy, salty, and sweet elements create a perfect blend. I had this alongside a bright Thai Salad, which I am still working on perfecting. For those who love extra sauce, simply double the sauce recipe!

Chicken ingredients:
2 boneless skinless chicken breasts
3 tbsp. cornstarch
2 eggs
1/2 cup flour
1/2 tsp. salt
1/4 tsp pepper
1 tbsp. sunflower oil
Sauce ingredients:
1 tsp sesame oil
2 tsp rice vinegar
1 clove garlic, minced
1 tsp fresh ginger, grated
2 tbsp. brown sugar
3 tbsp. ketchup
2 tbsp. soya sauce
1/2 tsp chili flakes
1 tsp cornstarch
1/4 cup water
1 tsp sesame seeds (garnish)
Instructions:
Prepare three small bowls: 1 with the cornstarch, one with 2 beaten eggs, and one with flour seasoned with salt and pepper.
Cut your chicken into bite sized pieces
Working with 3-4 pieces of chicken at a time, coat each piece with cornstarch, then egg, then seasoned flour. Shake off any excess and place the coated chicken on a clean plate. Repeat this sequence until all of the chicken is battered.
Prepare your sauce by stirring all of the listed ingredients together in a small bowl, except the cornstarch and water. Combine these in a separate small bowel to create a slurry.
In a large frying pan or wok, heat your sunflower oil. Add your battered chicken to the pan in 3 batches. Each batch should be cooked for 5-6 minutes until the chicken is a light golden color or at 165 degrees Fahrenheit. Set the cooked chicken aside to a paper towel lined plate.
To the now empty pan, add your sauce and cornstarch slurry. Allow it to simmer on low for 2-3 minutes. Add all of the cooked chicken to the pan and toss well to coat all pieces with the sauce. Transfer the chicken to a serving plate and garnish with 1 tsp. sesame seeds.
This chicken would also be great served with the sesame-soy angel hair pasta.
