Spaghetti Bolognese with a twist

My spaghetti Bolognese with a secret ingredient—curry powder—came about one day when I decided to put a twist on my mom’s classic recipe. I added curry to the sauce on a whim, and it instantly became a hit. Now, it’s a regular dish in our household. My younger brother Kevin often asks me if I'll be making this whenever he is coming over as he loves anything curried. This past summer, I taught him how to make it himself. It’s one of those recipes that just feels like home now.

Ingredients:

  • 400g spaghetti noodles

  • 1 lb. ground beef

  • 1 medium onion, chopped

  • 15 oz. diced tomatoes (about half of a can)

  • 8 oz. tomato sauce

  • 1 tbsp. tomato paste

  • 3 cloves garlic, minced

  • 1 tsp maple syrup (sub. white sugar)

  • 1 tsp dried oregano

  • 2 tsp curry powder

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp course ground black pepper (adjust to taste)

  • 1 tbsp. cooking oil of choice

  • 1/4 tsp cayenne pepper (optional)

  • Parmesan for serving (optional)


Instructions:

  • Heat your oil and add the ground beef to a medium sauce pan. Cook the beef for 5-6 minutes until it is mostly cooked. Drain off any excess fat if necessary.

  • Add whole chopped onion, curry powder, salt, black pepper and cayenne. Stir and cook for 3-4 minutes until the onions begin to become translucent and take on the yellow hue from the curry.

  • Add garlic, oregano and tomato paste. Cook 1-2 minutes and stir well until everything is well coated with tomato paste.

  • Add diced tomatoes, tomato sauce and maple syrup. Cook for at least 20 minutes on medium-low heat, stirring every few minutes. (a longer cook is always better - up to 40 minutes).

  • While the sauce is cooking, boil your pasta in 4-5 cups of water with a generous pinch of salt. Follow the package instructions for the pasta.

  • Serve this curried spaghetti Bolognese with parmesan (optional) and enjoy!
