The Best Chili

I absolutely love chili, but I’m incredibly picky about it. For me, chili is the ultimate comfort dish. The texture can’t be too soupy, and it can’t be too thick—it’s all about getting that right, hearty blend. The flavor has to be bold but not overwhelming, with just the right amount of spice and acidity. Over the years, I’ve worked on my version, and when it comes together just right, it’s the kind of dish that makes you feel cozy and satisfied.

Ingredients:

  • 1 lb. lean ground beef

  • 1 large onion, chopped

  • 2 garlic cloves, chopped

  • 1 tbsp. cumin

  • 1 tbsp. chili powder

  • 1/2 tsp ground chipotle chili pepper

  • 1/2 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 1 tbsp. brown sugar

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp. tomato paste

  • 15 oz. diced tomatoes

  • 8 oz. tomato sauce

  • 1 cup beef broth

  • 1 16 oz. can kidney beans

  • juice from 1/4 lime

  • 1 tbsp. olive oil

  • Optional garnish: sour cream, cheddar cheese, green onion


Instructions:

  • In a small bowl, combine the cumin, chili powder, chipotle chili pepper, paprika, garlic powder, oregano, and brown sugar. Set aside.

  • In a large saucepan, heat cooking oil then add the ground beef. Season the beef with salt and pepper and cook the beef stirring frequently for 5-6 minutes. Drain off any excess fat if necessary.

  • Add the seasoning blend, chopped onion, and minced garlic to the mostly cooked beef. Stir and cook for another 2-3 minutes.

  • Add the tomato paste, stirring it through to coat the seasoned beef.

  • Add the diced tomatoes, tomato sauce, and beef stock. Cook for 20-25 minutes on medium-low, stirring occasionally.

  • Add the canned kidney beans and lime juice. Cook for 5-10 more minutes.

  • Serve and Garnish as you please!
