Sarah's Cowboy Caviar

I first tried cowboy caviar poolside with some friends, and I was hooked right away. It was so fresh, healthy, and packed with bright flavors—just the perfect snack for a sunny day. I knew I had to try making it myself! It’s light, refreshing, and super easy to share at any get-together. Cowboy caviar has that perfect summer vibe.

Ingredients:
1 cup canned whole kernel corn
1 cup canned black beans, drained and rinsed
1 cup diced fresh cherry tomatoes
1 tbsp. red onion, finely chopped
1 raw jalapeno, chopped (include seeds optional)
1 tbsp. fresh chopped parsley
Juice of 1 lime
1 tsp nice olive oil
1 tsp chili powder
1/4 tsp garlic powder
2 tsp honey
1/2 tsp salt (more if desired)
1/2 tsp cracked black pepper
Bag of tortilla chips
Instructions:
In a small bowl, combine your lime juice, olive oil, honey, and spices. Set aside.
In a medium bowl, combine your corn, beans, tomato, onion, jalapeno, and parsley. Stir to combine.
Add your sauce and stir well. Season with salt and pepper. Refrigerate for a minimum of 30 minutes.
Serve with tortilla chips - I love blue corn!
